Overnight Oats with Coconut & Lemon

This is a breakfast fit for kings and queens! Delicious and so quick and easy to prepare! The added bonus is if you make enough for the week, and provided they are kept in the fridge in a sealed container, the dish lasts up to five days and you simply top with fresh berries daily! Simples!


SERVES 1

INGREDIENTS:

50g rolled porridge oats

70g natural greek yoghurt

20g unsweetened desiccated coconut

150ml unsweetened almond milk

1 lemons grated zest

1 tbsp chia seeds

1 tbsp maple syrup

1/2 tsp vanilla extract

Small handful of fresh berries


  • Combine all ingredients into a bowl and ensure mixed thoroughly

  • Transfer to a container with a sealable lid and pop in the fridge to thicken overnight
