RECIPE OF THE MONTH

INGREDIENTS:
500g tomatoes (different colours)
2 x tablespoons extra-virgin olive oil
90g fresh mozzarella sliced
1/2 teaspoon salt
1/4 teaspoon pepper
Small amount of fresh basil
INSTRUCTIONS:
In a large bowl, combine all of the ingredients except the basil. Gentle toss the ingredients so that they are well combined before placing on a serving dish. Top the salad with fresh basil leaves and serve as a refreshing side dish or appetiser.
