Turkey Con Avocado

I love this dish! Super quick and easy and the turkey mince ensures it's a super lean protein rich dish and it really is just as tasty as a typical chilli con carne!


SERVES 1

INGREDIENTS:

1/2 tbsp coconut oil

1 tbsp low fat greek yoghurt

300g turkey mince (2% reduced fat)

1/2 avocado

1/2 courgette

1 green chilli

1 red or yellow pepper

1 red onion

2 tsp ground cumin

1 tsp smoked paprika


  • Heat the coconut oil in a frying pan on a high heat

  • Add the courgette, chilli, pepper and onion and stir fry until veg softens

  • Add the turkey mince, breaking up large lumps and cook through

  • Add the paprika, cumin and a generous pinch of salt and pepper

  • Slice the avocado and serve with greek yoghurt
